BLUEBERRY SPELT MUFFINS September 16, 2020

We sent Bronni Darné of the absolutely beautiful Instagram page 365wholesomedays some blueberries and she created two delectable recipes for us!

Ingredients
2 1/2 cups spelt flour
2 1/2 tsp baking powder
1 cup coconut blossom sugar
1/2 cup vegetable or nut oil (I use macadamia or almond oil)
2 tsp vanilla extract
3/4 cup almond milk
3 cups fresh blueberries


Method
Preheat the oven to 180C and line a 12-cup muffin tray. Place the flour, sugar and baking powder in a large bowl and whisk to combine. In a medium bowl whisk together the oil, vanilla and milk. Fold the egg mixture into the flour mixture until just combined. Add the blueberries and gently mix. Divide the mixture between the muffin tins and bake for 25 to 30 minutes until a toothpick inserted comes out clean.
