DECONSTRUCTED APPLE AND FIG CRUMBLE September 17, 2021
APPLES
8 granny smith apples, cored and chopped
1/3 cup coconut sugar
1 tsp finely grated lemon rind
2 tsp lemon juice
CRUMBLE TOPPING
1/3 cup coconut sugar
2/3 cup shredded coconut
1 cup spelt flour, sifted
1/2 cup rolled oats
1/2 cup dried figs
1/2 cup pecans
1 tsp ground cinnamon
1 tsp vanilla extract
125g unsalted butter, melted

FOR THE SAUCE
1/4 cup crunchy peanut butter
2 Tbsp tamarind paste
3 Tbsp brown rice syrup
1/4 cup tamari sauce
1/4 water
Juice of 2 limes

Preheat oven to 180ºc and grease a baking dish.
Place the apple, sugar, lemon rind and lemon juice in a large bowl and mix to combine.
In a separate bowl mix together the crumble topping ingredients.
Place the apple mixture in the baking dish, top with the crumble and bake for 50 minutes
until the apples are soft and the crumble topping is golden.
Serve with coconut yoghurt.
