Parsnip Fritters (With Brown Rice, Pesto And Parsley Salad) July 21, 2021
FRITTERS
250g Parsnips grated
2 Tbs Flaxseed
75ml water
1 Tbs Honey
2 cloves garlic minced
1 tsp baking powder
¾ cup almond flour
½ tsp chilli powder
1 tsp paprika
½ cup sweet corn
Mix flaxseed with water and set aside.
Combine the rest of the ingredients and mix well. Pour in the flaxseed and mix to form a dough. Heat 2 tablespoons of coconut oil in a heavy-based frying pan on medium high. Form the dough into small fritter shapes and cook for 3 to 4 minutes on either side until crispy and golden.

1 cup brown rice
1 stalk celery sliced
Hanfdul parsley chopped
Handful lettuce
4 medjool dates, chopped
Pesto
Lemon juice
¼ cup toasted coconut
