Spiced Carrot + Pear Muffins July 21, 2021
250g gluten free flour mix
2 tsp baking powder
125g unsalted butter, softened
100g coconut sugar
1 cup pear puree
2 cups grated carrot
2 eggs
1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp cardamom
Pinch of salt
Optional: 1/2 cup walnut or pecan pieces
Preheat the oven to 180 degrees C and prepare a muffin tin.
Add your softened butter, sugar, vanilla, bananas and eggs to a food processor and blend until creamy. Add the flour, baking powder and spices and pulse until just combined. Fold in the grated carrots and nuts (if using). Pour the batter into the muffin tin and bake for 25min or until the a skewer and comes out clean
DIY GLUTEN FREE FLOUR MIX
1 1/2 cups brown rice flour
1/2 cup potato starch
1/4 cup white rice flour
1/4 cup tapioca flour
1 tsp xanthan gum
Blend together and store in a secure container in a dry place.
