TURNIPS FOR DAYS March 28, 2021

CHILLI BUTTER TURNIPS

1 large turnip diced

60g ghee melted

60ml olive oil

2 Tbsp chilli flakes

1 Tbsp harissa paste

1 tsp coconut sugar

Pinch salt

Preheat the oven to 200C. Mix the chilli butter ingredients together and then toss over the turnips to cost well. Place on a baking tray lined with parchment paper and bake for 30 to 40 minutes until the turnips are softened and browned. 

PAPRIKA TURNIP WEDGES

1 turnips cut into wedges

1 Tbsp paprika

1 Tbsp salt flakes

1 Tbsp olive oil

Preheat the oven to 200C. Toss all the ingredients together and cost the turnips well. Place on a line baking tray and bake for 30 to 40 minutes until the turnips are nicely brown.

MISO BABY ONIONS

10 small onions trimmed and halved

50g salted melted butter

50g white miso paste

300 ml water

Preheat the oven to 200C. Whisk the butter, miso and water together. Place the onions cut side down in a baking dish. Cover with the miso water. Then cover tightly with foil. 

Bake for 30 minutes and then remove the foil and bake for a further 30 minutes until the onions are browned and the sauce has thickened. 

GREEN SALAD

Rocket

Baby fennel bulb

Broccoli florets

Toasted Almond flakes

VEGAN CAESAR DRESSING

2 Tbsp lemon juice

1 Tbsp red wine vinegar

1 tsp honey

2 clove garlic

1/3 cup nutritional yeast

1 tsp chile powder

2 tsp vegan Worcestershire sauce

Handful fresh herbs (I used coriander and mint)

1/3 cup olive oil

Salt to taste.

Place in a blender and pulse to combine.

COCONUT YOGHURT DRESSING

1/2 cup coconut yoghurt

Juice of one lemon

Generous grind of cracked black pepper

Handful of chopped parsley

Salt to taste

Place in a small bowl and whisk to combine.
