Vegan Pear Bread August 11, 2021


3 cups wholewheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 Tbsp ground cinnamon

2 tsp ground cardamom
1 cup walnut pieces
3/4 cup coconut oil, melted
3 chia eggs
1 cup coconut sugar
2 cups grated pear

2 tsp vanilla extract

1/2 tsp almond essence

Heat your oven to 180C and lightly grease and line a loaf tin.

Prepare your chia eggs by mixing 3 tbsp of chai seeds with 9 tbsp of water. Set aside for 10 mins.

Whisk together the flour, baking soda, baking powder, salt, and spices in a large bowl. 

In a medium bowl, combine the melted oil, chia eggs, sugar, grated pear, nuts, vanilla and almond essence and stir to combine. 

Gently fold the pear mixture into the flour mixture.

Scrape the batter into the prepared pan and bake for 60 to 70 and a wooden skewer inserted in the centre comes out clean.
